After an apprenticeship with the confectioner Boccard, from Rohr, chocolate maker in Geneva, and the emblematic restaurateur Frédy Girardet in Crissier, Tristan Carbonatto feels the irresistible need to become self-employed.
His strong personality is driven by a thirst to innovate by always taking up challenges, which pushes him to deploy his talents by giving free rein to his imagination. His taste for chocolate now extends to his entire team and beyond the village to many followers throughout Switzerland.

Based in Lausanne, Sandrine Franchini-Guichard is at the helm of MAISON Galatà. After a first professional life in the service of economic and urban projects as well as the management of a support network for business creators, she is passionate about cooking of all kinds.
MAISONGalatà has developed an original recipe based on a delicious and healthy mixture of the best almonds, rice flour, sunflower oil, indigenous brown sugar, honey and Swiss farm eggs. And a small pinch of Bex flower of salt. The result: a light, gourmet madeleine with natural and authentic flavours, with a reduced sugar content and naturally gluten and lactose free.
